My friend (non-scd) shared this idea with me and I've been using it ever since. THANK YOU TANYA!!! I'm going to put more details on my blog as I have a few other ideas I'd like to share. In the meantime, here goes:
Ingredients:
-1 head of Cauliflower (per 2 or 3 people)
-Blender
We have a VitaMix but I've also used my mothers Walmart blender and it worked fine!
Directions:
1. Break or cut Cauliflower up into pieces that will fit into the small opening of the lid on your blender.
2. Turn Blender on low (on my VitaMix, I use 7)
3. After about 1/2 cup of cauliflower, you will notice it doesn't blend anymore. Take a wooden stick and remove all bits and pieces into bowl or directly into wok.
4. Continue until all is blended.
5. Cook on medium with preferred oil, depending on recipe, or 1 tbsp. water.
6. Use as a stirfry replacement. My kids and husband LOVE it!!
I'll post some recipes I've been using with it as soon as I can. I may be slow. I haven't found any recipes that use cauliflower this way and I'm very excited!! :)
